Sausage and Potato Casserole made with Smoked Sausage and Potatoes and Onion

Grandma Bev always said: “If it’s bubbling at the edges, it’s ready to make everyone happy.” This casserole is exactly that kind of dish—simple, cozy, and built from pantry staples. Smoked sausage, onions, and potatoes bake together until the sausage coins are browned and the potatoes turn tender with caramelized edges. It’s classic Midwestern oven fare: practical, budget-friendly, and perfect for feeding a hungry crowd with minimal fuss.

Serve it straight from the enamel pans while it’s still bubbling, alongside a crisp salad or steamed green beans. A tangy side like coleslaw or pickles balances the richness, and warm bread is perfect for soaking up the flavorful juices. For extra flair, set out sour cream, mustard, or hot sauce so everyone can customize their plate.
