Ingredients:

| Shredded cheddar cheese | 1 cup | 
| Cooked bacon bits | 1/2 cup | 
| Chopped green onions | 1/4 cup | 
| Sour cream | 1/2 cup | 
| Large egg | 1 | 
| Bread crumbs | 1 cup | 
| Salt and pepper | To taste | 
| Olive oil spray | For coating | 
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, combine mashed potatoes, cheddar cheese, bacon bits, green onions, sour cream, and egg. Mix well.
- Season with salt and pepper to taste.
- Shape mixture into small patties.
- Coat patties with bread crumbs.
- Place patties on a parchment-lined baking sheet.
- Spray tops with olive oil.
- Bake for 20-25 minutes, or until golden brown and crispy.
