These crispy and flavorful potato cakes are packed with cheddar cheese, bacon, and green onions. Perfect for a hearty appetizer or side dish.

Ingredients:

Ingredient Quantity
Mashed potatoes 2 cups
Shredded cheddar cheese 1 cup
Cooked bacon bits 1/2 cup
Chopped green onions 1/4 cup
Sour cream 1/2 cup
Large egg 1
Bread crumbs 1 cup
Salt and pepper To taste
Olive oil spray For coating

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine mashed potatoes, cheddar cheese, bacon bits, green onions, sour cream, and egg. Mix well.
  3. Season with salt and pepper to taste.
  4. Shape mixture into small patties.
  5. Coat patties with bread crumbs.
  6. Place patties on a parchment-lined baking sheet.
  7. Spray tops with olive oil.
  8. Bake for 20-25 minutes, or until golden brown and crispy.
  9. Serve hot with sour cream or your favorite dipping sauce.
