Salted Caramel Peanut Ritz Crackers

These “no-bake” treats are the perfect combination of salty, sweet, and crunchy. The addition of peanut butter to the caramel makes the filling extra creamy and prevents it from getting too hard.

How To Make Salted Caramel Peanut Ritz Crackers:
Step 1: Prepare the Caramel-Peanut Filling: Line a large baking sheet with parchment paper. Arrange half of the Ritz crackers (16/17 crackers) face down on the sheet. In a microwave-safe bowl, combine the 11 oz of caramel bits and the 2 tbsp of creamy peanut butter. Microwave in 30-second intervals, stirring well between each, until the mixture is completely smooth (this usually takes about 1 1/2 minutes total).

Step 2: Assemble the Sandwiches: Working quickly before the caramel sets, spoon 1 teaspoon of the warm caramel mixture onto the center of each cracker. Top with a second Ritz cracker and press down gently to spread the filling to the edges. Let the sandwiches cool and firm up for at least 5 minutes.

Step 3: Enrobe in Chocolate: Place the 10/12 oz of chocolate chips in a clean microwave-safe bowl. Melt using the same 30-second burst method, stirring until smooth. Using two forks, dip each cracker sandwich into the melted chocolate, turning to coat all sides. Let the excess chocolate drip back into the bowl before placing the cracker back onto the parchment paper.
Step 4: Decorate and Set: Immediately sprinkle your chosen toppings (flaky sea salt, chopped peanuts, or pretzels) over the wet chocolate before it sets. Let the crackers cool at room temperature for 1 hour, or place them in the refrigerator for 15 minutes to firm up quickly.
