Ingredients:

Ingredients Quantity
Even-sized open cup mushrooms (stalks cut level) 16
Olive or coconut oil 3 tbsp
Unsalted butter, softened 1/4 cup
Garlic, chopped very finely 3 cloves
Fresh thyme, chopped 2 tbsp
Lemon juice 1 1/2 tbsp
Salt and freshly ground black pepper To taste
Fresh breadcrumbs 1/4 cup

Instructions:

  1. Preheat the Oven:
    • Set the oven to 200C/400F/gas mark 6.
  2. Prepare the Mushrooms:
    • Lightly fry 16 even-sized open cup mushrooms (stalks cut level) in 3 tbsp of olive or coconut oil for 20 seconds.
  3. Arrange in Roasting Tin:
    • Place the mushrooms in a shallow roasting tin with the stalks facing upwards.
  4. Make Garlic Butter Blend:
    • Mix 1/4 cup softened unsalted butter, 3 finely chopped cloves of garlic, 2 tbsp chopped fresh thyme, 1 1/2 tbsp lemon juice, salt, and freshly ground black pepper.
