Cinnamon Sugar Biscuit Bites

These Cinnamon Sugar Biscuit Bites are essentially “express” monkey bread. By using refrigerated biscuits and a quick dip-and-coat method, you get all the warm, gooey satisfaction of a cinnamon roll in a fraction of the time. The kitchen shears trick is a brilliant way to keep the dough from getting squashed, ensuring each bite stays light and airy.

How To Make Cinnamon Sugar Biscuit Bites:

Step 1: Prep Your Station: Preheat your oven to 375°F and generously spray an 8×8-inch baking dish with cooking spray.1 Set up an assembly line: one shallow bowl with the 4 tablespoons of melted butter, and another bowl with the sugar and cinnamon mixed together.

Step 2: Cut the Dough: Open the biscuit tube and use kitchen shears to cut each individual biscuit into 3 equal pieces. Lay the pieces out on a plate, ensuring they don’t touch so they stay easy to grab.

Step 3: Coat and Arrange: Using the assembly line method, dip a dough piece into the butter, roll it in the cinnamon-sugar mixture until fully coated, and place it into the prepared baking dish.2 Repeat until all pieces are nestled in the pan. They should be snug but in a single layer.

Step 4: Bake; Bake for 15/18 minutes. You are looking for the tops to be a deep golden brown and the sugar to have turned into a bubbling, caramelized syrup around the edges.

Step 5: Glaze and Serve: While the bites cool for a few minutes, whisk together the confectioners’ sugar, milk, and vanilla until smooth. Drizzle the icing generously over the warm bites. Serve immediately while they are pull-apart soft.
