Rice Krispie Chocolate Chip Cookies

This recipe takes a classic chocolate chip cookie and adds rolled oats and crispy Rice Krispie cereal for an extra chewy and crunchy texture.

How To Make Rice Krispie Chocolate Chip Cookies:
Step 1: Preheat & Prep: Preheat the oven to 350F (175C) and line a baking sheet with parchment paper.

Step 2: Mix Dry Ingredients: In a medium bowl, whisk together the 2 cups flour, 1 tsp baking powder, and 1 tsp baking soda. Set aside.

Step 3: Cream Butter & Sugars: In a large mixing bowl, beat the 1 cup butter, 1 cup brown sugar, and 1 cup granulated sugar with an electric mixer until light and fluffy (about 2-3 minutes).
Step 4: Add Eggs & Vanilla: Mix in the 2 eggs and 2 tsp vanilla extract until fully incorporated.
Step 5: Combine Wet & Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Step 6: Fold in Mix-Ins: Gently fold in the 2 cups rolled oats, 2 cups Rice Krispie cereal, and 1-2 cups chocolate chips until evenly distributed.
Step 7: Form and Bake: Using a cookie scoop, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 9-10 minutes or until the edges turn lightly golden brown.
