How To Make Quick and Easy Pan Fried Corn Fritters:

  1. Prepare the Batter: In a large bowl, combine the fresh corn kernels, all-purpose flour, baking powder, salt, and black pepper. In a separate bowl, whisk together the milk, egg, and melted butter.
  2. Combine & Mix: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix the batter.
  3. Heat Oil: In a large skillet, heat enough vegetable oil to coat the bottom of the pan over medium heat.
  4. Fry the Fritters: Drop spoonfuls of the corn batter into the hot oil, flattening each fritter slightly with the back of the spoon. Fry for 2-3 minutes on each side, or until golden brown and crispy.
  5. Drain & Serve: Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve the corn fritters warm. Enjoy!
