Ingredients
Versatile flour for the work surface
1/2 Pat Press recipe for plum pie
2 large sweet potatoes (about 1 1/2 pounds)
1/2 cup (1 stick) butter, at room temperature
1 1/4 cup granulated sugar
2 large eggs
1/2 teaspoon ground spices
1 teaspoon ground cinnamon
1/2 teaspoon fresh nutmeg
1 teaspoon pure vanilla extract
Juice of half a lemon

Directions:

Step 1: Crafting the Perfect Crust On a floured work surface, roll the paté into a 15-inch round. Remove excess flour, place the dough into a 9-inch round plate, and press it into the edges. Trim to 1 inch hanging all around. Customize the edges as desired. Cover with plastic wrap and cool the pie crust until firm, about 30 minutes.

Step 2: Preparing Sweet Potatoes Preheat the oven to 375°F. Fill a saucepan with 2 inches of water and bring it to a boil. Use a steaming basket, add sweet potatoes, and cover. Steam until easily pierced with a fork, approximately one hour. Allow sweet potatoes to cool before removing them.

Step 3: Mashing and Mixing Place the sweet potato in an electric mixer bowl with the beater attachment. Beat on medium speed until well mashed, ensuring any stringy pieces wrap around the beater attachment. Remove the paddle attachment, clean, and reattach.

Step 4: Creating the Filling With the mixer on low speed, add butter, whisk until well combined and slightly cooled. Gradually add sugar. Add eggs one at a time, beating after each addition. Introduce allspice, cinnamon, nutmeg, vanilla, and lemon juice. Continue beating until well mixed.

Step 5: Baking Brilliance Pour the mixture into the prepared pie crust. Transfer to the oven and bake until the center is firm, approximately 45 to 50 minutes.

Indulge in the delight of this decadent Southern sweet potato pie – a perfect harmony of flavors and textures. Enjoy the culinary journey!
