Large egg yolks 3

Directions

  1. Combine the cornstarch, sugar, and salt in a medium saucepan and stir well.
  2. Gradually add the whole milk, ensuring it mixes smoothly.
  3. Stir constantly over medium heat until the mixture starts to gently boil and thickens, about 5-7 minutes.
  4. Beat the egg yolks gently in a separate bowl. Slowly add around half a cup of the warm milk mixture to the eggs while stirring to prevent curdling.
  5. Incorporate the beaten egg yolks back into the pot with the rest of the milk mixture, stirring constantly.
  6. Continue stirring for a few more minutes until the pudding thickens.
  7. Remove the pan from the stove and mix in the lemon zest, butter, and lemon juice until well combined and the butter is melted.
  8. Pour the pudding into a large bowl or individual serving dishes.
  9. Cover the top of the pudding with plastic wrap to prevent a skin from forming, and place it in the refrigerator for at least 2 hours or until firm.
  10. Cool the lemon pudding before serving. Top with whipped cream and extra lemon zest, if desired.
