📝 Ingredients

Pretzel Dough
Active dry yeast 2¼ teaspoons
Warm water 1½ cups
Salt 1 teaspoon
Sugar 1 tablespoon
Butter (melted) 1 tablespoon
All-purpose flour 3¾ cups
Pretzel Soak
Water 9 cups
Baking soda ½ cup
Coarse salt As needed
Beer Cheese Dip
Butter ¼ cup (½ stick)
All-purpose flour ¼ cup
Lager beer ½ cup
Heavy whipping cream 1 cup
Sharp cheddar cheese 2 cups, shredded
Garlic powder 2 teaspoons
Worcestershire sauce ½ teaspoon
Dry mustard ½ teaspoon
Salt ½ teaspoon
Black pepper ¼ teaspoon
Cayenne pepper ⅛ teaspoon

Make the Pretzel Dough

  1. In a large bowl, whisk together yeast, warm water, salt, and sugar. Let sit for 5 minutes until foamy.
  2. Stir in melted butter. Add flour and mix with a fork until dough begins to form.
  3. Knead by hand for 2–3 minutes until soft and smooth.
  4. Lightly flour the dough, cover, and let rest for 30 minutes.

Shape & Boil the Pretzel Bites

  1. Transfer dough to a floured surface. Divide into six equal pieces.
  2. Roll each piece into a 20-inch rope and cut into 10–12 bite-sized pieces.
  3. Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
  4. In a large pot, bring 9 cups of water to a boil. Reduce heat to medium-low and stir in baking soda until dissolved.
  5. Working in batches, drop 10–15 pretzel bites into the soda bath for 10–15 seconds. Remove with a slotted spoon and place on baking sheets.
  6. Sprinkle with coarse salt and bake for 15 minutes, or until golden brown.

Make the Beer Cheese Dip

  1. In a medium saucepan over low heat, melt butter. Whisk in flour and cook for 1 minute.
  2. Slowly add beer, whisking constantly. Then add cream, continuing to whisk until thickened.
  3. Stir in garlic powder, Worcestershire sauce, dry mustard, salt, pepper, and cayenne.
