Make the Pretzel Dough
- In a large bowl, whisk together yeast, warm water, salt, and sugar. Let sit for 5 minutes until foamy.
- Stir in melted butter. Add flour and mix with a fork until dough begins to form.
- Knead by hand for 2–3 minutes until soft and smooth.
- Lightly flour the dough, cover, and let rest for 30 minutes.
Shape & Boil the Pretzel Bites
- Transfer dough to a floured surface. Divide into six equal pieces.
- Roll each piece into a 20-inch rope and cut into 10–12 bite-sized pieces.
- Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.
- In a large pot, bring 9 cups of water to a boil. Reduce heat to medium-low and stir in baking soda until dissolved.
- Working in batches, drop 10–15 pretzel bites into the soda bath for 10–15 seconds. Remove with a slotted spoon and place on baking sheets.

Make the Beer Cheese Dip
