- Step 1: Preheat the Oven Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal after baking.
- Step 2: Mix the Dry Ingredients In a medium bowl, whisk together the 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1/2 teaspoon salt, and 1/2 teaspoon ground cinnamon (if using). Set this bowl aside.
- Step 3: Combine the Wet Ingredients In a large mixing bowl, whisk together the 3/4 cup granulated sugar, 2 large eggs, and 1 teaspoon vanilla extract until the mixture is smooth and well combined. Stir in the 1/2 cup melted unsalted butter (or coconut oil) and the 1 can (8 oz) crushed pineapple (undrained, or 1 cup fresh crushed pineapple with juice). Mix until all wet ingredients are fully combined.
