Instructions:

  1. Choose older eggs: Use eggs that are at least a week old. They tend to peel more easily.
  2. Boil water: Fill a pot with enough water to cover the eggs by about an inch. Bring to a rolling boil.
  3. Prepare ice bath: Fill a large bowl with ice and water.
  4. Add eggs: Gently lower the eggs into the boiling water using a slotted spoon. Reduce heat to a gentle boil.
  5. Cook: Cook for 9-12 minutes, depending on desired doneness.
  6. Shock in ice bath: Immediately transfer the cooked eggs to the ice bath. Let them sit for at least 5 minutes.
  7. Peel: Tap the eggs gently to crack the shell. Roll the egg between your hands to loosen the shell. Start peeling from the larger end.
