- Preheat your oven to 480º F (250º C). Prepare a 9×13 inch baking pan by greasing it well and lining it with parchment paper.
- In a large bowl, whisk together the 4 large eggs and 4 1/4 cups of whole milk until they are thoroughly combined.
- Add the 7 tablespoons of melted unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt to the egg and milk mixture. Whisk again to incorporate these ingredients.
- Sift the 2 cups plus 3 tablespoons of all-purpose flour directly into the wet ingredients. Continue to mix the batter until it is smooth and there are no large lumps of flour remaining.
- Pour the pancake batter into the prepared 9×13 inch baking dish, ensuring it is spread evenly across the bottom.
- Place the baking dish in the preheated oven and bake for 15 minutes at 480º F (250º C).
- After 15 minutes, reduce the oven temperature to 430º F (220º C) and continue baking for an additional 15 minutes, or until the pancake is deeply golden brown on top.
- Remove the baked pancake from the oven and let it cool in the pan for about 5 minutes. You will notice that the pancake will deflate slightly as it cools.
