Chicken Rub (Note 2):

1 tsp paprika powder
1 tsp dried thyme
1/2 tsp garlic powder
1/2 tsp onion powder
3/4 tsp salt
Black pepper
Optional Garnish:
Oil spray
Fresh thyme leaves or finely chopped parsley

Instructions:

  1. Preheat your oven to 180°C/350°F.
  2. Scatter chopped onion and minced garlic in a baking dish (approximately 10 x 15″ / 25 x 35 cm). Place the butter in the center. Bake for 15 minutes (check at 12 minutes, and mix if some bits are browning too much).
  3. While the onion and garlic are baking, mix together the Chicken Rub. Sprinkle this mixture on both sides of the chicken.
  4. Remove the baking dish from the oven. Add the uncooked rice and mix it with the onions and garlic.
  5. Place the chicken on top of the rice. Then pour the hot chicken broth and water around the chicken.
  6. Cover the dish with foil and bake for 30 minutes. Afterward, remove the foil, and if desired, spray the chicken with oil for a nicer finish. Bake for an additional 20 minutes or until the liquid is absorbed.
  7. Let the dish stand for 5 minutes, then remove the chicken and fluff up the rice. You can garnish with fresh thyme leaves or finely chopped parsley if desired. Serve and enjoy!

Optional Gravy: While this dish is flavorful enough to enjoy without sauce, you can elevate it by making a quick gravy in just 4 minutes.
