One-Pot Texas Hash

Ingredients:

Ground beef 1 pound
Dry mustard 1/2 teaspoon
Chili powder 2 1/2 teaspoons

Freshly ground black pepper 1/4 teaspoon
Uncooked long grain white rice 1/2 cup
Tomato paste 2 tablespoons
Diced tomatoes with juice 1 (14.5-ounce) can
Water 1 cup
Worcestershire sauce 1 1/2 teaspoons
Grated cheddar or Monterey jack cheese Optional

Instructions:

  1. Brown Beef & Sauté Vegetables: In a large skillet (one with a lid that can be covered), heat the 2 tablespoons of olive oil over medium-high heat. Add the 1 cup diced onion, 1 cup diced green bell pepper, 1 tablespoon minced fresh garlic, and 1 pound ground beef. Add the 1/2 teaspoon dry mustard, 2 1/2 teaspoons chili powder, 2 teaspoons salt, and 1/4 teaspoon freshly ground black pepper. Sauté, breaking up the ground beef with a wooden spoon or spatula as it cooks, until the beef is fully browned and no longer pink, and the vegetables are softened. Drain any excess grease.
  2. Add Rice & Tomato Paste: Stir in the 1/2 cup uncooked long grain white rice and 2 tablespoons tomato paste into the beef mixture in the skillet. Cook for 3 minutes, stirring constantly, to lightly toast the rice and cook out the raw flavor of the tomato paste.
  3. Add Liquids & Simmer: Add the 1 14.5-ounce can diced tomatoes with juice, 1 cup water, and 1 1/2 teaspoons Worcestershire sauce to the skillet. Stir everything together well. Bring the mixture to a simmer, then reduce the heat to low, cover the skillet with a lid, and let it simmer for 20 minutes.
  4. Check Doneness & Fluff: After 20 minutes, remove the lid. Fluff the mixture with a fork. If the mixture appears too soupy or wet and the rice isn’t fully cooked, cook for an additional 2 minutes uncovered, stirring occasionally, allowing any excess liquid to evaporate and the rice to finish cooking.
  5. Serve: Sprinkle with grated cheddar or Monterey jack cheese if desired, and serve warm directly from the skillet.
