Southern Chocolate Cobbler

Ingredients:

For the Batter:

Unsalted butter 1/2 cup
Granulated sugar 1 1/2 cups
Unsweetened cocoa powder 4 tablespoons
All-purpose flour 2 cups
Baking powder 2 teaspoons
Salt 1/4 teaspoon
Milk 1 cup
Vanilla extract 2 teaspoons

Granulated sugar 2 cups
Unsweetened cocoa powder 1/2 cup
Boiling water 3 cups
Vanilla ice cream For serving

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Place the butter in a 9×13-inch baking dish and put it in the preheated oven.
  3. Once the butter has completely melted, remove the baking dish from the oven and set it aside. Do not stir the melted butter.
  4. In a mixing bowl, stir together the 1 1/2 cups of granulated sugar, 4 tablespoons of cocoa powder, all-purpose flour, baking powder, salt, milk, and vanilla extract until just combined.
  5. Spoon the batter evenly over the melted butter in the baking dish. Do not stir the batter into the butter.
  6. In a separate bowl, mix together the 2 cups of granulated sugar and the 1/2 cup of cocoa powder for the topping.
  7. Sprinkle the sugar and cocoa powder mixture evenly over the batter in the baking dish.
  8. Carefully pour the boiling water evenly over the topping. Do not stir the water into the batter or topping.
  9. Bake in the preheated oven for 35-40 minutes, or until the top has set. The bottom will remain loose and a bit gooey.
  10. Let the cobbler cool for at least 15 minutes before serving.
  11. Serve warm with a scoop of vanilla ice cream, if desired. Enjoy!
