Instructions:
- Preheat oven to 350°F (175°C).
- Place the butter in a 9×13-inch baking dish and put it in the preheated oven.
- Once the butter has completely melted, remove the baking dish from the oven and set it aside. Do not stir the melted butter.
- In a mixing bowl, stir together the 1 1/2 cups of granulated sugar, 4 tablespoons of cocoa powder, all-purpose flour, baking powder, salt, milk, and vanilla extract until just combined.
- Spoon the batter evenly over the melted butter in the baking dish. Do not stir the batter into the butter.
- In a separate bowl, mix together the 2 cups of granulated sugar and the 1/2 cup of cocoa powder for the topping.
- Sprinkle the sugar and cocoa powder mixture evenly over the batter in the baking dish.
- Carefully pour the boiling water evenly over the topping. Do not stir the water into the batter or topping.
- Bake in the preheated oven for 35-40 minutes, or until the top has set. The bottom will remain loose and a bit gooey.
- Let the cobbler cool for at least 15 minutes before serving.
- Serve warm with a scoop of vanilla ice cream, if desired. Enjoy!
