Instructions:
- Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
- Make the Filling/Topping: In a small bowl, combine brown sugar, cinnamon, and nutmeg (if using). Mix well.
- Make the Cake Batter: In a large bowl, whisk together sugar, melted butter, sour cream, eggs, milk, and vanilla extract until smooth.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Add Dry to Wet: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Overmixing will make the bread tough.
- Prepare Apples: Peel, core, and chop 1 Granny Smith apple into 1/2-inch cubes.
- Fold in Apples: Add all but a small handful of the chopped apples to the batter and gently fold to combine.
- Layer in Loaf Pan: Pour half of the batter into the prepared loaf pan and spread evenly.
- Add Filling: Sprinkle half of the cinnamon sugar mixture over the batter. Use a butter knife to cut swirls through the batter.
- Top with Remaining Batter: Pour the remaining batter over the first layer and spread evenly.
- Add Remaining Apples and Filling: Top with the reserved apple cubes and the remaining cinnamon sugar mixture. Cut swirls through the batter again.
- Bake: Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Let the bread cool in the pan for 10-20 minutes on a wire rack.
- Make the Glaze: In a small bowl, whisk together sifted icing sugar and hot water until you reach your desired consistency.
- Glaze the Bread: Spoon or drizzle the glaze over the cooled bread. Let the glaze set for 5-10 minutes before slicing and serving.
