This recipe combines the comforting flavors of apple fritters with the ease of baking a loaf of bread.

Unsalted Butter, melted & cooled 1/2 cup
Sour Cream, room temperature 1/2 cup
Large Eggs, room temperature 2
Milk, room temperature 2 Tablespoons
Vanilla Extract 1 teaspoon
All-Purpose Flour 1 1/2 cups
Baking Powder 1 teaspoon
Baking Soda 1/2 teaspoon
Salt 1/4 teaspoon

Glaze:

Icing Sugar, sifted 1/3 cup
Hot Water 1-2 teaspoons

Instructions:

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  2. Make the Filling/Topping: In a small bowl, combine brown sugar, cinnamon, and nutmeg (if using). Mix well.
  3. Make the Cake Batter: In a large bowl, whisk together sugar, melted butter, sour cream, eggs, milk, and vanilla extract until smooth.
  4. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Add Dry to Wet: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Overmixing will make the bread tough.
  6. Prepare Apples: Peel, core, and chop 1 Granny Smith apple into 1/2-inch cubes.
  7. Fold in Apples: Add all but a small handful of the chopped apples to the batter and gently fold to combine.
  8. Layer in Loaf Pan: Pour half of the batter into the prepared loaf pan and spread evenly.
  9. Add Filling: Sprinkle half of the cinnamon sugar mixture over the batter. Use a butter knife to cut swirls through the batter.
  10. Top with Remaining Batter: Pour the remaining batter over the first layer and spread evenly.
  11. Add Remaining Apples and Filling: Top with the reserved apple cubes and the remaining cinnamon sugar mixture. Cut swirls through the batter again.
  12. Bake: Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  13. Cool: Let the bread cool in the pan for 10-20 minutes on a wire rack.
  14. Make the Glaze: In a small bowl, whisk together sifted icing sugar and hot water until you reach your desired consistency.
  15. Glaze the Bread: Spoon or drizzle the glaze over the cooled bread. Let the glaze set for 5-10 minutes before slicing and serving.
