- Step 1: Prepare the Pan: Grease a large baking sheet or jelly roll pan generously with butter or line it with parchment paper to prevent the candy from sticking.\
- Step 2: Combine & Cook: In a heavy-bottomed saucepan, combine 4 cups of sugar, heavy cream, unsalted butter, and baking soda. Stir well to combine. Place the saucepan over medium heat and bring the mixture to a boil, stirring constantly to prevent scorching. Once boiling, reduce the heat to medium-low and continue to cook, stirring occasionally, until the mixture reaches the soft ball stage, about 240°F (116°C) on a candy thermometer.
- Step 3: Add Final Ingredients: Once the mixture reaches the desired temperature, remove it from the heat. Stir in the remaining 2 cups of sugar, the vanilla extract, and the chopped nuts. Mix well until everything is evenly distributed.
