Stuffed Cabbage Rolls

Ingredients:

Medium Head Cabbage (3 pounds) 1
Ground Beef 1/2 pound
Ground Pork 1/2 pound
Tomato Sauce 1 can (15 ounces)
Onion, chopped 1 small
Long Grain Rice, uncooked 1/2 cup
Dried Parsley Flakes 1 tablespoon
Salt 1/2 teaspoon
Fresh Dill or Dill Weed, snipped 1/2 teaspoon
Cayenne Pepper 1/8 teaspoon
Diced Tomatoes, undrained 1 can (14 1/2 ounces)
Sugar 1/2 teaspoon

Instructions:

  1. Cook Cabbage: Cook the cabbage in boiling water until the outer leaves can be easily pulled away from the head. Set aside 12 large leaves for the rolls.

  2. Prepare Filling: In a small bowl, combine the ground beef, ground pork, 1/2 cup of the tomato sauce, chopped onion, rice, parsley flakes, salt, dill, and cayenne pepper. Mix well.

  3. Prepare Cabbage Leaves: Cut out the thick vein from the bottom of each cabbage leaf, making a V-shaped cut.

  4. Roll Cabbage Rolls: Place about 1/4 cup of the meat mixture on each cabbage leaf. Fold in the sides of the leaf. Beginning from the cut end, roll up tightly. Repeat with the remaining leaves and meat mixture.

  5. Arrange in Dutch Oven: Slice the remaining cabbage and place it in a Dutch oven. Arrange the cabbage rolls seam-side down over the sliced cabbage.

  6. Combine Sauce: In a separate bowl, combine the diced tomatoes, sugar, and the remaining tomato sauce. Pour this mixture over the cabbage rolls.

  7. Bake: Cover the Dutch oven and bake at 350°F (175°C) for 1 1/2 hours, or until the cabbage rolls are tender.
