These Southern-style biscuit bombs are a delicious and savory treat. The flaky biscuits are filled with gooey mozzarella cheese and seasoned with garlic powder and fresh parsley for a burst of flavor.

Ingredients:

Ingredient Quantity
All-purpose flour 2 cups
Baking powder 1 tablespoon
Salt 1 teaspoon
Baking soda 1/2 teaspoon
Unsalted butter, cold and cubed 1/2 cup
Buttermilk 1 cup
Mozzarella cheese, small cubes 12
Melted butter 1/4 cup
Garlic powder 1 teaspoon
Fresh parsley, chopped 1 tablespoon

Instructions:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, salt, and baking soda in a large bowl.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Pour in buttermilk and stir until dough comes together.
  5. Knead dough gently on a floured surface.
  6. Pat dough into a 1/2-inch thick rectangle. Cut into 12 equal squares.
  7. Place a mozzarella cube in the center of each square. Fold dough around it, pinching seams to seal.
  8. Arrange biscuit bombs seam-side down on the prepared baking sheet.
  9. Brush tops with melted butter and sprinkle with garlic powder.
  10. Bake for 15-18 minutes, or until golden brown and cheese is melted.
  11. Brush with remaining melted butter and sprinkle with fresh parsley. Serve warm.
