Never tried this before until now and it’s to die for!

These baked bacon jalapeno popper eggrolls are a delicious and spicy appetizer that’s perfect for parties or game day. The crispy egg roll wrappers are filled with a creamy mixture of cream cheese, cheddar cheese, bacon, jalapenos, and seasonings.

Ingredients:

Ingredient Quantity
Egg roll wrappers 12
Cream cheese, softened 8 oz
Shredded cheddar cheese 1 cup
Bacon, cooked and crumbled 6 strips
Jalapenos, seeded and diced 4 large
Garlic powder 1/2 teaspoon
Onion powder 1/2 teaspoon
Salt and pepper To taste
Olive oil spray As needed

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cream cheese, cheddar cheese, bacon, jalapenos, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.
  3. Lay an egg roll wrapper on a clean surface. Place about 2 tablespoons of the filling mixture in the center of the wrapper.
  4. Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Seal the edges with a dab of water. Repeat with the remaining wrappers and filling.
  5. Place the eggrolls seam side down on the prepared baking sheet. Lightly spray the tops with olive oil spray.
  6. Bake for 15-20 minutes, turning halfway through, or until the eggrolls are crispy and golden brown.
  7. Remove from the oven and let cool slightly before serving. Enjoy with your favorite dipping sauce or sides.
