These baked bacon jalapeno popper eggrolls are a delicious and spicy appetizer that’s perfect for parties or game day. The crispy egg roll wrappers are filled with a creamy mixture of cream cheese, cheddar cheese, bacon, jalapenos, and seasonings.

Ingredients:
Ingredient | Quantity |

Egg roll wrappers | 12 |
Cream cheese, softened | 8 oz |
Shredded cheddar cheese | 1 cup |
Bacon, cooked and crumbled | 6 strips |
Jalapenos, seeded and diced | 4 large |
Garlic powder | 1/2 teaspoon |
Onion powder | 1/2 teaspoon |
Salt and pepper | To taste |
Olive oil spray | As needed |
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine the cream cheese, cheddar cheese, bacon, jalapenos, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.
- Lay an egg roll wrapper on a clean surface. Place about 2 tablespoons of the filling mixture in the center of the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll up tightly. Seal the edges with a dab of water. Repeat with the remaining wrappers and filling.
- Place the eggrolls seam side down on the prepared baking sheet. Lightly spray the tops with olive oil spray.
- Bake for 15-20 minutes, turning halfway through, or until the eggrolls are crispy and golden brown.
- Remove from the oven and let cool slightly before serving. Enjoy with your favorite dipping sauce or sides.
