This easy pistachio bread is a moist and flavorful treat made with boxed cake mix and instant pudding. It’s a delightful dessert or snack, especially for pistachio lovers.

Ingredients:

Yellow Cake Mix (15.25 oz) 1 box
Pistachio Instant Pudding (3.4 oz each) 3 boxes
Hot Water 1 cup
Vegetable Oil 1/2 cup
Eggs (room temperature) 4
Chopped Pistachios 1/4 cup
Green Food Coloring (optional) 2-4 drops
Red and Green Sprinkles (optional) As needed

Instructions:

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease two loaf pans.
  2. Combine Wet Ingredients: In a large mixing bowl, combine the yellow cake mix, pistachio instant pudding mix, hot water, vegetable oil, eggs, and green food coloring (if using).
  3. Whisk Ingredients: Whisk the ingredients until fully combined and smooth.
  4. Add Pistachios: Add the chopped pistachios to the mixing bowl. Whisk for an additional 1-2 minutes to incorporate them evenly.
  5. Transfer to Pans: Pour the batter evenly into the prepared loaf pans.
  6. Add Sprinkles (Optional): If desired, sprinkle red and green sprinkles over the top of the batter in each loaf pan.
  7. Bake: Bake for 40-45 minutes, or until a toothpick inserted into the center of the bread comes out clean.
  8. Cool: Allow the bread to cool in the loaf pans before removing them.
