Ingredients:

Ingredients Quantity
Rice noodles 8 oz
Vegetable oil 2 tablespoons
Chicken breast 1 lb
Garlic 2 cloves
Eggs 3
Bean sprouts 1.5 cups
Red bell pepper 1, thinly sliced
Green onions 3, chopped
Roasted peanuts 1/2 cup, chopped
Cilantro 1/4 cup, chopped
Lime wedges For serving

Instructions:

  1. Preheating the oven: Preheat your oven to 375°F (190°C) to ensure it’s ready when the casserole is assembled.
  2. Cooking rice noodles: Cook the rice noodles according to the package instructions, drain them, and set them aside.
  3. Cooking chicken: In a large skillet, heat the vegetable oil over medium heat. Add the chicken breast pieces and cook until they are no longer pink, about 5-7 minutes.

Tip: For added flavor, marinate the chicken in a mixture of soy sauce, lime juice, and ginger before cooking.

  4. Sautéing garlic: Add the minced garlic to the skillet with the chicken and sauté for another minute until fragrant.
  5. Cooking eggs: Push the chicken and garlic to one side of the skillet and pour in the beaten eggs on the other side. Scramble the eggs until fully cooked, then mix them together with the chicken.
  6. Adding vegetables: Add the bean sprouts, red bell pepper, and green onions to the skillet. Stir and cook for an additional 3-4 minutes, until the vegetables are slightly tender.

Tip: Feel free to add other vegetables such as carrots, broccoli, or snap peas for extra color and nutrition.

  7. Assembling the casserole: In a casserole dish, combine the cooked rice noodles, the chicken and vegetable mixture, and half of the chopped peanuts.
  8. Baking the casserole: Bake the assembled casserole in the preheated oven for 15-20 minutes, until everything is heated through and slightly crispy on top.
  9. Garnishing and serving: Once out of the oven, sprinkle the remaining peanuts and fresh cilantro over the casserole. Serve with lime wedges on the side for an extra zesty kick!
