Breadcrumbs 1 cup
Ketchup 1/4 cup
Worcestershire Sauce 2 tablespoons
Dried Thyme 1 teaspoon

Potatoes 4 large, thinly sliced
Cheddar Cheese 1 cup, grated
Chopped Fresh Parsley (optional) For garnish

How To Make Cowboy Meatloaf and Potato Casserole:

  1. Step 1: Preheat and Prep: Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Step 2: Mix the Meatloaf: In a large bowl, combine ground beef, onion, garlic, breadcrumbs, cup ketchup, Worcestershire sauce, dried thyme, salt, and pepper. Mix well until everything is evenly incorporated.
  3. Step 3: Layer the Casserole:
    • Spread half of the sliced potatoes on the bottom of the greased baking dish.
    • Shape the meatloaf mixture into a loaf and place it on top of the potatoes.
    • Arrange the remaining sliced potatoes over the meatloaf, covering it completely.
