Creamed Chipped Beef on Toast

Ingredients:

Ingredient Quantity
Dried Beef Slices (rinsed well & chopped) 1 jar
Butter 4 tablespoons
All-Purpose Flour 4 tablespoons
Cayenne Pepper Pinch
Milk 2 cups
Sea Salt To taste
Freshly Cracked Black Pepper To taste
Bread (toasted) As needed

Instructions:

  1. Rinse and chop the beef: Thoroughly rinse the dried beef slices under cold water to remove excess salt. Pat them dry with a paper towel and then chop them into small, bite-sized pieces. Set aside.
  2. Melt the butter: In a large saucepan, heat the butter over medium heat until it is completely melted.
  3. Make the roux: Add the all-purpose flour and a pinch of cayenne pepper to the melted butter. Whisk continuously until the mixture is smooth and cooked through, about 45 seconds. This creates a roux, which will thicken the sauce.
  4. Slowly add the milk: Very gradually pour in the milk while whisking constantly. This helps prevent lumps from forming in the sauce.
  5. Add the beef: Once all the milk has been added and the sauce is smooth, stir in the chopped dried beef.
  6. Thicken the sauce: Cook the mixture, stirring occasionally, for a few minutes until the sauce has thickened to your desired consistency.
  7. Season to taste: Taste the creamed chipped beef and season with sea salt and freshly cracked black pepper as needed. Be mindful that the dried beef is already salty, so you may not need much additional salt.
