Instructions:
- Prep the potatoes: Thinly slice the potatoes (about ⅛-inch thick) and immediately plunge them into water to prevent browning.
- Preheat oven: Preheat your oven to 350°F (177°C). Lightly grease a 9×13-inch baking dish.
- Cook the beef: In a large (4-5 quart) saucepan or Dutch oven, brown the ground beef, diced onions, and garlic over medium-high heat. Stir frequently and crumble the beef. Drain any excess oil.
- Prepare the sauce: In a separate bowl, mix together the cream of mushroom soup, half and half, onion powder, kosher salt, and black pepper. Stir until well combined.

- Final layer: Add the remaining potato slices and meat mixture. Pour the remaining sauce over the top, then sprinkle with the remaining 1½ cups of shredded cheese.
- Bake (covered): Cover the dish tightly with foil and bake for about 1 hour and 10 minutes.
- Bake (uncovered): Remove the foil and bake for another 20 minutes, or until the potatoes are tender and the cheese is golden brown.
