This hearty Hamburger Potato Casserole is a comforting and satisfying dish, perfect for family dinners. Layers of thinly sliced potatoes, seasoned ground beef, and creamy mushroom sauce are topped with melted cheese for a truly delicious meal.

Ingredients:

Lean ground beef 2 pounds
Sweet yellow onion (diced) 1 cup
Garlic (minced) 1 tablespoon
Cream of mushroom soup 10.5 ounces
Half and half 1 cup
Onion powder 1 tablespoon
Kosher salt 1 ½ teaspoons
Freshly cracked black pepper 1 teaspoon
Colby Jack cheese (shredded, divided) 3 cups

Instructions:

  1. Prep the potatoes: Thinly slice the potatoes (about ⅛-inch thick) and immediately plunge them into water to prevent browning.
  2. Preheat oven: Preheat your oven to 350°F (177°C). Lightly grease a 9×13-inch baking dish.
  3. Cook the beef: In a large (4-5 quart) saucepan or Dutch oven, brown the ground beef, diced onions, and garlic over medium-high heat. Stir frequently and crumble the beef. Drain any excess oil.
  4. Prepare the sauce: In a separate bowl, mix together the cream of mushroom soup, half and half, onion powder, kosher salt, and black pepper. Stir until well combined.
  5. Layer 1: Drain the potato slices. Place a third of the potato slices in the bottom of the baking dish. Top with a third of the ground beef mixture and ¾ cup of shredded cheese. Drizzle a third of the creamy sauce over the cheese.
  6. Layer 2: Repeat the layering process with another third of the potatoes, meat, cheese, and sauce.
  7. Final layer: Add the remaining potato slices and meat mixture. Pour the remaining sauce over the top, then sprinkle with the remaining 1½ cups of shredded cheese.
  8. Bake (covered): Cover the dish tightly with foil and bake for about 1 hour and 10 minutes.
  9. Bake (uncovered): Remove the foil and bake for another 20 minutes, or until the potatoes are tender and the cheese is golden brown.
  10. Rest: Let the casserole rest for 15 minutes before serving. This allows the casserole to set and cool slightly.
