This light and refreshing Strawberry Angel Cake is a simple yet elegant dessert perfect for any occasion. Fluffy angel food cake is layered with a sweet and creamy mixture of fresh strawberries, whipped topping, and mini marshmallows, creating a delightful and easy-to-make treat.

Cool Whip, thawed 16 oz
Fresh strawberries, diced 2 ½ cups
Mini marshmallows 2 ½ cups

Instructions:

  1. If you are using a homemade angel food cake, ensure that it has cooled completely before you begin assembling the dessert.
  2. In a large bowl, add the diced fresh strawberries. Using the back of a fork, lightly mash some of the strawberries to release their juices.
  3. Add the thawed Cool Whip and mini marshmallows to the bowl with the mashed strawberries.
  4. Gently fold all the ingredients together until they are evenly combined. Be careful not to overmix.
  5. Cover the bowl with plastic wrap and refrigerate the strawberry cream mixture for 20 minutes. This chilling time will help the flavors meld together.
  6. While the cream mixture is chilling, place the angel food cake on your serving platter.
  7. Using a sharp serrated knife, carefully cut the angel food cake horizontally into three even layers. Set the top two layers aside.
  8. Spread a generous amount of the chilled strawberry cream mixture evenly over the bottom layer of the angel food cake.
  9. Carefully place the middle layer of the angel food cake on top of the cream mixture.
  10. Spread another generous layer of the strawberry cream mixture over the middle cake layer.
  11. Finally, place the top layer of the angel food cake over the cream mixture.
  12. Spread the remaining strawberry cream mixture over the top and sides of the entire cake until it is fully covered.
  13. Chill the assembled Strawberry Angel Cake in the refrigerator for a minimum of 90 minutes before serving. This will allow the cake to set and the flavors to further meld.
  14. If desired, decorate the top of the chilled cake with sliced fresh strawberries before serving.
