My mom used to make this and it was delicious! Thankful to have found it.

Ingredients:

Ingredient Quantity
Canned or Cooked Salmon 2 cans (14.75 ounces each)
Finely Chopped Onion 1/4 cup
Finely Chopped Red Bell Pepper 1/4 cup (optional)
Fresh Parsley 2 tablespoons (or 2 teaspoons dried)
Lemon Juice 1 tablespoon
Dijon Mustard 1 teaspoon
Garlic Powder 1/2 teaspoon
Paprika 1/2 teaspoon
Salt 1/2 teaspoon (or to taste)
Black Pepper 1/4 teaspoon
Breadcrumbs 2/3 cup
Large Eggs 2, lightly beaten
Mayonnaise 2 tablespoons
Vegetable Oil (for frying) 2 tablespoons

Instructions:

Step 1: Prepare the Ingredients

  1. Drain and Flake the Salmon: If using canned salmon, drain it well and flake it into a large mixing bowl. If using cooked salmon, break it into small pieces.
  2. Chop the Vegetables: Finely chop the onion and red bell pepper (if using).

Step 2: Mix the Ingredients

  1. Combine Main Ingredients: In the large bowl, combine the flaked salmon, chopped onion, chopped red bell pepper (optional), parsley, lemon juice, Dijon mustard, garlic powder, paprika, salt, and black pepper. Mix well.
  2. Add Binders: Add the breadcrumbs, beaten eggs, and mayonnaise to the salmon mixture. Stir until all ingredients are evenly incorporated.

Step 3: Shape the Patties

  1. Form Patties: Shape the mixture into patties about 3 inches in diameter and 1/2 inch thick. You should be able to make approximately 8 patties.

Step 4: Cook the Patties

  1. Heat the Oil: In a large skillet, heat the vegetable oil over medium heat.
  2. Cook the Patties: Once the oil is hot, carefully place the salmon patties in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  3. Drain Excess Oil: Transfer the cooked patties to a paper towel-lined plate to drain any excess oil.

Step 5: Serve

  1. Serve Hot: Serve the salmon patties hot with your favorite sauce or condiments, such as tartar sauce, lemon wedges, or creamy dill sauce.
  2. Pair with Sides: Enjoy them on their own as a main dish, or serve on buns as a salmon burger.
