Ground beef or turkey 1 pound
Taco seasoning 1 package
Water 1 cup
Salsa 1 cup
Shredded cheddar cheese 1 cup
Shredded Monterey Jack cheese 1 cup

Green onions, chopped 2
Fresh cilantro, chopped (optional) 1/4 cup

Enchilada sauce 1 (12 oz) can

Instructions:

  1. Preheat the Oven:
    • Set the oven to 350°F.
  2. Cook the Pasta Shells:
    • Boil a large pot of salted water.
    • Add 24 large pasta shells and cook until tender (about 8 minutes) or follow al dente instructions on the box.
  3. Prepare the Taco Seasoned Meat:
    • Brown 1 pound of ground beef or turkey in a skillet over medium heat.
    • Drain excess fat, add 1 package of taco seasoning, and simmer with 1 cup of water for 5 minutes. Set aside.
  4. Create the Cheese Mixture:
    • In a mixing bowl, combine 1 (16 oz) container of ricotta cheese, 1 egg, half of 1 cup shredded cheddar and Monterey Jack cheeses, chopped green onions, and optional 1/4 cup chopped cilantro. Season with salt and pepper.
  5. Assemble the Dish:
    • Spread the taco-seasoned meat in a 9×13-inch baking dish.
    • Spoon the cheese mixture into each pasta shell and nestle them over the meat.
  6. Add Sauce and Cheese:
    • Drizzle 1 (12 oz) can of enchilada sauce over the shells.
    • Sprinkle the remaining half of 1 cup shredded cheddar and Monterey Jack cheeses for a gooey finish.
  7. Bake:
