Crab Stuffed Cheddar Bay Biscuits with Lemon Butter

Crab Filling

Onion powder | ½ tsp |
Mayonnaise | ½ + cup |
Mustard | 1 tbsp |
Ritz crackers | ½ sleeve, crushed |

Lemon Butter

Lemon juice | 1 tsp |
Instructions:
- Prepare the biscuit mix according to the package directions and set aside.
- Preheat the oven to 375°F. Spray two muffin tins with nonstick spray.
- In a bowl, combine the cooked lump crab meat, paprika, onion powder, mustard, mayonnaise, and crushed Ritz crackers. Stir well, adding a touch more mayonnaise if needed.
- Dust your hands with flour. Using a scoop, take some biscuit mix and form a cup shape.
- Place a scoop of the crab mixture into the “bowl” of the biscuit.
- Cover the crab filling with a little more biscuit dough, sealing the edges.
- Continue until all the dough and filling are used.
- Place each biscuit into a muffin tin.
- Bake for 12 to 15 minutes.
- Brush the baked biscuits with a mixture of melted butter and 1 teaspoon of lemon juice. Serve warm.
