These crispy and cheesy baked potato balls are a delicious and easy appetizer or side dish. They’re perfect for potlucks, parties, or a weeknight dinner.

Ingredients:

| Mashed potatoes | 2 cups | 
| Grated cheddar cheese | 1/2 cup | 
| Chopped chives | 1/4 cup | 
| Cooked and crumbled bacon | 1/4 cup | 
| Egg, beaten | 1 | 
| Breadcrumbs | 1/2 cup | 
| Salt and pepper | To taste | 
| Olive oil spray | For baking | 
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
 - In a large bowl, combine the mashed potatoes, cheddar cheese, chives, bacon, egg, salt, and pepper.
 - Form the mixture into small balls and roll them in breadcrumbs.
 - Place the potato balls on the baking sheet and spray with olive oil.
 - Bake for 20-25 minutes, or until golden brown and crispy.
 - Let cool slightly before serving.
