These crispy and cheesy baked potato balls are a delicious and easy appetizer or side dish. They’re perfect for potlucks, parties, or a weeknight dinner.

Ingredients:

Ingredient Quantity
Mashed potatoes 2 cups
Grated cheddar cheese 1/2 cup
Chopped chives 1/4 cup
Cooked and crumbled bacon 1/4 cup
Egg, beaten 1
Breadcrumbs 1/2 cup
Salt and pepper To taste
Olive oil spray For baking

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed potatoes, cheddar cheese, chives, bacon, egg, salt, and pepper.
  3. Form the mixture into small balls and roll them in breadcrumbs.
  4. Place the potato balls on the baking sheet and spray with olive oil.
  5. Bake for 20-25 minutes, or until golden brown and crispy.
