Instructions:

  1. Step 1: Preheat the Oven Preheat your oven to 400°F (200°C). Lightly grease a baking dish (a 9×13-inch dish works well for this quantity).
  2. Step 2: Cook the Shrimp Heat the 2 tablespoons unsalted butter and 2 tablespoons olive oil in a large skillet over medium heat. Add the 4 minced garlic cloves and sauté for 1 minute, until fragrant. Be careful not to burn the garlic. Add the 1 lb large shrimp to the skillet and cook for 2–3 minutes per side, until they turn pink and opaque. Do not overcrowd the pan; cook in batches if necessary. Remove the cooked shrimp from the skillet and set aside.
  3. Step 3: Make the Sauce In the same skillet (no need to clean it), add the 1/2 cup chicken broth, 1/2 cup heavy cream, lemon juice, lemon zest, and 1/4 cup dry white wine (if using). If not using wine, add an additional 1/4 cup of chicken broth. Stir everything to combine and bring the sauce to a gentle simmer. Let it simmer for 3–4 minutes, stirring occasionally, allowing the sauce to thicken slightly. Season the sauce with salt, pepper, and 1/4 teaspoon red pepper flakes (if desired) to taste.
  4. Step 4: Assemble the Bake Return the cooked shrimp to the skillet and toss them gently to coat them evenly in the delicious sauce. Transfer the entire shrimp and sauce mixture to the prepared baking dish, spreading it out evenly. In a small bowl, combine the 1 cup shredded mozzarella cheese, 1/2 cup grated Parmesan cheese, and 1/4 cup chopped fresh parsley. Sprinkle this cheese and herb mixture evenly over the top of the shrimp and sauce in the baking dish.
  5. Step 5: Bake Place the baking dish in the preheated oven and bake for 10–12 minutes, or until the cheese is beautifully melted, bubbly, and lightly golden brown on top.
  6. Step 6: Garnish and Serve Remove the Shrimp Scampi Bake from the oven. Sprinkle with additional chopped fresh parsley for a final pop of color and freshness. Serve hot, ideally over pasta, rice, or with plenty of crusty bread on the side to soak up all that incredible sauce!
