Noodles Romanoff is a classic comfort dish, featuring tender pasta coated in a rich, creamy sauce made with sour cream, cream cheese, and Parmesan, seasoned with savory spices. Baked to bubbly perfection, it’s a wonderfully comforting and satisfying side dish or light main course.

Ingredients:

Fettuccine or spaghetti 8 ounces (1/2 1 lb box)
Cream cheese, room temperature 4 ounces
Unsalted butter, room temperature 2 tablespoons
Sour cream, room temperature 16 ounces
Ground black pepper 1 teaspoon
Fine salt 1/2 teaspoon
Garlic powder 1/2 teaspoon
Ground nutmeg 1/4 teaspoon
Shredded Parmesan cheese, divided 1 cup
Ground paprika 1/4 teaspoon

Instructions:

  1. Preheat Oven & Prep Dish: Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with baking spray and set it aside.
  2. Cook Pasta: Cook the fettuccine or spaghetti according to package directions until they are al dente (cooked but still firm to the bite), typically about 12 to 14 minutes.
  3. Drain & Return to Pot: Drain the cooked pasta thoroughly. Return the hot pasta to the same pot you used for cooking it, and place the pot back on the still-warm burner (off the heat, or on very low heat to keep it warm).
  4. Melt Cheeses & Butter: Add the room temperature cream cheese and room temperature unsalted butter to the hot pasta in the pot. Stir constantly until both the cream cheese and butter are completely melted and have coated the pasta.
  5. Stir in Seasonings & Half Parmesan: Stir in the room temperature sour cream, ground black pepper, fine salt, garlic powder, and ground nutmeg. Mix until everything is well combined and the pasta is thoroughly coated with the creamy sauce. Stir in half of the shredded Parmesan cheese.
  6. Transfer to Baking Dish & Top: Pour the coated noodles into the prepared 8×8-inch baking dish, spreading them evenly. Cover the top of the dish with the remaining shredded Parmesan cheese. Sprinkle the ground paprika evenly over the cheese.
  7. Bake: Bake uncovered for 30 minutes, or until the top cheese is melted and golden brown, and the noodles are hot and bubbly.
  8. Serve: Remove from the oven and serve warm.
