Baked Mozzarella Stuffed Meatballs
Ingredients:

Parsley, chopped | 1/2 cup |
Parmesan Cheese, grated | 2/3 cup |
Bread crumbs | 1/3 cup |
Egg | 1 large |
Marinara sauce | 2 tablespoons + 1/3 cup |
Garlic, minced | 3 cloves |
Crushed red pepper flakes | 1 pinch |
Salt | To taste |
Pepper | To taste |
Ground beef | 1.5-2 lbs |
Mozzarella cheese, cubed (1/2 inch) | 16 pieces |
Instructions:
- Preheat oven: Position the oven rack in the lower third of the oven and preheat to 400°F (200°C).
- Combine ingredients: In a large bowl, combine the grated onion, chopped parsley, Parmesan cheese, bread crumbs, egg, 2 tablespoons of marinara sauce, minced garlic, red pepper flakes, salt, and pepper. Mix well.
- Add ground beef: Add the ground beef to the bowl and mix thoroughly with your hands until evenly combined.
- Form meatballs: Shape the meat mixture into 16 meatballs.
- Add cheese: Make a small hole in the center of each meatball. Place a cube of mozzarella cheese inside each hole. Reform the meatball around the cheese, ensuring it’s completely enclosed.
- Bake: Pour 1/3 cup of marinara sauce into the bottom of a baking dish. Arrange the meatballs in the dish and drizzle with a little extra virgin olive oil.
- Bake: Bake in the preheated oven for 15 minutes, or until the meatballs are cooked through.
