This recipe takes the classic lasagna and gives it a delightful twist with tender chicken and vibrant broccoli florets. The creamy white sauce and gooey cheeses create a truly satisfying casserole perfect for weeknight dinners or feeding a crowd.

Ingredients:

Lasagna Noodles 9
Boneless, Skinless Chicken Breasts 4, cubed
Frozen Broccoli 12 oz. bag, thawed
Mozzarella Cheese 8 oz., shredded
Parmesan Cheese 1 cup, grated
Onion 1 small, chopped
Garlic 2 cloves, minced
Salt 1/4 tsp + 1 tbsp
Olive Oil 2 tsp
Butter 5 tbsp
Flour 5 tsp
Chicken Broth 1 cup
Milk (full-fat) 1 1/2 cups
Dried Basil 1 tsp

Instructions:

  1. Prep It Up

    • Cook the lasagna noodles according to package directions until al dente. Drain and set aside.
    • In a skillet with olive oil, cook the cubed chicken with a pinch of salt until golden brown and cooked through (5-7 minutes). Set aside.
    • Sauté the chopped onion and garlic in the same skillet until fragrant. Add the thawed broccoli and cook for another 2-3 minutes. Set aside.
  2. Create the Creamy White Sauce

    • Melt the butter in a saucepan over medium heat.
    • Gradually whisk in the flour to create a smooth paste.
    • Slowly pour in the chicken broth and milk, whisking constantly to avoid lumps. Cook and whisk until the sauce thickens (5-7 minutes).
    • Season the sauce with dried basil and salt. Remove from heat.
  3. Lasagna Time!

    • Preheat your oven to 375°F (190°C).
    • Spread a thin layer of white sauce in a 9×13 inch baking dish. Top with 3 lasagna noodles.
    • Layer the cooked chicken, broccoli mixture, shredded mozzarella, and grated Parmesan cheese. Repeat layers two more times, ending with cheese on top.
  4. Bake and Enjoy

    • Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
    • Let the lasagna rest for 10 minutes before cutting to allow the layers to set.
    • Serve warm, garnished with extra Parmesan cheese and fresh basil (optional). Enjoy!
