Cheesy Hamburger Potato Casserole

Ingredients:

Ingredient Quantity
Ground Beef 1 pound, crumbled
Yellow Onion 1, diced
Potatoes 3-4 pounds, peeled and sliced (about ¼ inch thick)
Cheddar Cheese 8 ounces (or more), shredded
Cheddar Cheese Soup Mix 1 can
Evaporated Milk 12 ounces
Milk ½ cup
Salt 1 teaspoon
Pepper ½ teaspoon

Instructions:

  1. Preheat Oven: Preheat oven to 350°F (175°C).
  2. Cook Ground Beef: In a large skillet, cook the ground beef and diced onion until the meat is browned and the onion is softened. Drain any excess grease.
  3. Layer Casserole:
    • Spray a 9×13 inch baking dish with non-stick cooking spray.
    • Add a layer of potatoes to the bottom of the dish.
    • Season with salt and pepper.
    • Top with about one-third of the cooked ground beef mixture.
    • Sprinkle with one-third of the shredded cheese.
    • Repeat layers two more times, ending with a layer of cheese.
  4. Prepare Sauce: In a bowl, combine the Cheddar Cheese Soup Mix, evaporated milk, and regular milk. Stir until smooth. Season with additional salt and pepper to taste (optional).
  5. Bake: Pour the soup mixture evenly over the layered casserole.
    • Cover the baking dish tightly with aluminum foil.
    • Bake for 1 hour.
    • Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly and the potatoes are tender.
    • If using thicker potato slices, you may need to bake for longer.
  6. Serve: Let the casserole stand for a few minutes before serving. Enjoy!
