This Magic Chicken Pie lives up to its name with a surprisingly easy “dump-and-bake” method that creates its own biscuit-like crust as it bakes. Layers of tender chicken, mixed vegetables, and a creamy sauce come together under a fluffy topping for a truly comforting and satisfying meal.

Magic Chicken Pie

Ingredients:

Ingredient Quantity
Butter, cubed 6 tablespoons
Bisquick baking mix 2 cups
Milk 1 1/2 cups
Chicken stock 1 1/2 cups
Cream of chicken soup 1 (10.5 oz) can
Cooked chicken, shredded 2 cups
Fresh or frozen mixed vegetables 2 cups
White onion, chopped 1/2
Cheddar cheese, grated 1 cup

Instructions:

  1. Preheat Oven & Melt Butter: Preheat your oven to 350°F (175°C). Place the 6 tablespoons of cubed butter in the bottom of a 9×13-inch baking dish. Place the dish in the preheated oven until the butter is completely melted, then carefully remove it from the oven.
  2. Prepare Bisquick Batter: Meanwhile, in a large bowl, whisk together the 1 1/2 cups milk and 2 cups Bisquick baking mix until smooth. Set this batter aside.
  3. Prepare Soup Mixture: In a separate bowl, whisk together the 1 1/2 cups chicken stock and the 10.5 oz can of cream of chicken soup until well combined. Set this mixture aside.
  4. Assemble the Casserole (Layering – Do Not Stir!):
    • Layer 1 (Chicken): Arrange the 2 cups cooked, shredded chicken evenly over the melted butter in the baking dish.
    • Layer 2 (Vegetables): Arrange the 2 cups fresh or frozen mixed vegetables evenly over the chicken layer.
    • Layer 3 (Onion): Spread the 1/2 chopped white onion evenly over the vegetables.
    • Layer 4 (Cheese): Sprinkle the 1 cup grated cheddar cheese evenly over the onion.
    • Layer 5 (Bisquick Batter): Carefully pour the prepared Bisquick batter evenly over the top of the cheese.
    • Layer 6 (Soup-Stock Mixture): Gently pour the soup-stock mixture evenly over the Bisquick batter.
    • Important: Do NOT stir the layers after assembly. The magic happens as they bake!
  5. Bake: Bake in the preheated oven for 45-50 minutes, or until the top is beginning to brown and the pie is bubbly around the edges.
  6. Rest and Serve: Remove the casserole from the oven and let it rest for 10 minutes before serving. This allows the layers to set. Enjoy!
