If you are using it, add the chopped onion and cook until it softens, about 3-4 minutes, stirring with the sausage. Drain any excess grease from the skillet and set the cooked sausage mixture aside.
- Prepare the Egg Mixture: In a large mixing bowl, whisk together the 6 large eggs, 2 cups whole milk (or half and half), 1 teaspoon salt, 1/2 teaspoon black pepper, and the optional 1 teaspoon ground mustard until all ingredients are well combined and the mixture is frothy.
