Oven Baked Southwestern Beef and Pepper Bake

Ingredients:

Ground beef 1 pound
Olive oil 1 tablespoon
Onion, diced 1
Garlic, minced 2 cloves
Red bell pepper, diced 1
Yellow bell pepper, diced 1
Green bell pepper, diced 1
Diced potatoes 2 cups
Ground cumin 1 teaspoon
Chili powder 1 teaspoon
Salt and pepper To taste
Shredded Cheddar cheese 1 cup
Optional: Chopped fresh cilantro ¼ cup

How To Make Oven Baked Southwestern Beef and Pepper Bake:

  1. Prep Oven & Skillet: Preheat your oven to 375°F (190°C). In a large skillet, heat the olive oil over medium heat.
  2. Cook Beef & Veggies: Add the diced onion and garlic, sautéing until the onion is translucent. Add the ground beef to the skillet, cooking until browned and fully cooked. Drain any excess fat. Stir in the diced red, yellow, and green bell peppers, along with the diced potatoes. Cook for about 5 minutes, allowing the vegetables to soften slightly.
  3. Season & Transfer: Season the mixture with ground cumin, chili powder, salt, and pepper, stirring to combine. Transfer the beef and vegetable mixture to a baking dish, spreading it evenly.
  4. Top & Bake: Sprinkle the shredded Cheddar cheese over the top of the mixture. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the cheese is melted and golden brown.
