Smothered Cheesy Baked Chicken with Mushrooms (Low Carb)

Ingredients:

For the Chicken:

Ingredient Quantity
Boneless, skinless chicken breasts 4
Salt and pepper To taste
Olive oil 1 tablespoon

For the Cheese Sauce:

Ingredient Quantity
Butter 1 tablespoon
Mushrooms 8 oz (225g), sliced
Garlic cloves 2, minced
Heavy cream 1 cup (240ml)
Shredded cheddar cheese 1 cup (100g)
Dried thyme 1/4 teaspoon

Instructions:

  1. Prep and Sear: Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken breasts until golden brown on both sides. Transfer the skillet with chicken to the preheated oven and bake for 15-20 minutes, or until cooked through (internal temperature of 165°F). Remove and set aside chicken breasts.

  2. Make the Sauce: While the chicken bakes, melt butter in the same skillet over medium heat. Add the sliced mushrooms and sauté until golden brown and their moisture releases. Stir in the minced garlic and cook for an additional minute.

  3. Get Cheesy: Pour in the heavy cream and bring to a simmer. Gradually whisk in the shredded cheddar cheese until melted and the sauce is smooth. Season the cheese sauce with dried thyme, salt, and pepper. Let it simmer for a few minutes to thicken the sauce and allow the flavors to meld.

  4. Smother and Bake: Return the cooked chicken breasts to the skillet with the cheese sauce. Spoon the sauce and mushrooms over each chicken breast. Place the skillet back in the oven and bake for an additional 10-15 minutes, or until the chicken is heated through and the flavors are combined.

  5. Serve and Enjoy! Let the chicken rest for a minute before serving. Plate each chicken breast with a generous amount of cheesy mushroom sauce. Enjoy this low-carb dish with steamed vegetables or a crisp salad.
