Ingredients

For the Sandwich:

White bread, crust removed 4 slices
Low-moisture mozzarella, sliced ¼-inch thick 5 oz

For the Coating:

Large eggs, room temperature, lightly beaten 2
Whole milk, room temperature ⅔ cup
All-purpose flour 5 tablespoons
Panko bread crumbs (optional) ¼ cup
Kosher salt & freshly cracked black pepper To taste

For Frying:

Neutral vegetable oil ½ cup (enough for 1-inch depth)

Instructions

  1. Prep the Bread: If using mayonnaise, spread it on one side of each bread slice.
  2. Assemble the Sandwiches: Divide the mozzarella slices between two bread slices, then top with the remaining bread to form two sandwiches.
  3. Prepare Coating: In one shallow bowl, whisk together the eggs and milk, seasoning with salt and pepper. In another, mix the flour and panko (if using), adding salt and pepper.
  4. Dip & Coat: Working with one sandwich at a time, dip it in the egg-milk mixture, ensuring all sides are coated. Then, dredge it in the flour mixture, covering it evenly. Place on a parchment-lined tray. Repeat with the second sandwich.
  5. Chill: Refrigerate the sandwiches for 20 minutes to help the coating set.
  6. Heat the Oil: In a cast iron skillet or Dutch oven, heat the oil to 1-inch deep over medium heat.
  7. Fry to Perfection: Using a spatula, transfer the sandwiches into the hot oil. Fry for about 2 minutes per side, until golden brown and crisp.
  8. Slice & Serve: Transfer to a cutting board. For a clean, even cut, use a serrated knife—cut halfway through one side, flip, and cut again, stopping before slicing through the molten center.
