Instructions:

  1. Brown the Meat: In a large skillet, cook the ground beef and ground chuck over medium-high heat. Break the meat apart with a wooden spoon as it cooks. If your skillet is not large enough, work in batches to avoid overcrowding, which can steam the meat instead of browning it. Cook for 5-7 minutes until thoroughly browned. Once cooked, set the browned meat aside.
  2. Sauté Aromatics: In a large stockpot, heat the extra virgin olive oil over medium-high heat. Add the chopped yellow onion, chopped white onion, and diced jalapeno. Sauté for 3-5 minutes until the onions soften and become translucent, and the jalapeno is fragrant.
  3. Combine and Simmer (Initial): Add the browned ground meat back into the stockpot with the sautéed aromatics. Stir in the diced tomatoes, diced tomatoes with green chiles (like Rotel), hot pepper sauce, chili powder, ground cumin, garlic powder, kosher salt, and freshly ground black pepper. Bring the mixture to a boil.
  4. Long Simmer: Once boiling, reduce the heat to low, cover the stockpot, and let the chili simmer gently for 3 hours. This long simmering time allows the flavors to deepen and meld beautifully.
  5. Add Beans (Optional) and Final Simmer: If you are using pinto beans, add the undrained can of pinto beans to the chili after the initial 3-hour simmer. Continue to simmer on low heat for 1 more hour.
