Buttery Pecan Snowball Cookies
Ingredients:

Butter, softened | 1 cup |
Powdered sugar | 1/2 cup |
Salt | 1/4 teaspoon |
Vanilla extract | 1 1/2 teaspoons |
Flour | 2 1/4 cups |
Finely chopped pecans | 1 cup |
Powdered sugar, for dusting | 1 cup |
Instructions:
- Preheat Oven: Preheat oven to 350°F (175°C).
- Cream Ingredients: In a stand mixer, cream together butter and powdered sugar on low speed. Add salt, vanilla, flour, and pecans. Mix until combined.
- Roll and Bake: Roll dough into 1-inch balls and place on parchment-lined baking sheets, spacing them a few inches apart. Bake for 11 minutes, or until lightly golden.
- Coat in Powdered Sugar: Remove cookies from oven and let cool slightly. Place powdered sugar in a large bag or bowl. Roll 3-4 cookies at a time in the sugar, shaking off excess. Transfer to cooling racks and let cool completely. Roll each cookie in powdered sugar again.
