Mashed Potatoes with Ground Beef Gravy

Ingredients:

FOR THE MASHED POTATOES AMOUNT
Potatoes (Russet or Yukon Gold) 2 lbs
Milk, warmed 1 1/2 cups
Unsalted butter 1/4 cup (1/2 stick)
Salt and black pepper To taste
FOR THE GROUND BEEF GRAVY AMOUNT
Ground beef (80/20 blend) 1 lb
Beef broth 1 1/4 cups
Frozen carrots and peas (thawed) 1 cup
Onion, chopped 1 medium
All-purpose flour 2 tablespoons
Minced garlic 2 cloves
Curry powder (optional) 1/2 teaspoon
Salt and black pepper To taste

How To Make Mashed Potatoes with Ground Beef Gravy:

Step 1: Cook the Potatoes: Place the peeled and quartered potatoes in a large pot and cover with cold water. Bring to a boil, then simmer for 15/20 minutes until fork-tender. Drain very well to ensure your mash isn’t watery.

Step 2: Mash Until Creamy: Add the 1/4 cup of butter and 1 1/2 cups of warm milk to the potatoes. Mash until smooth and creamy, but be careful not to over-mix, or they can become gluey. Season with salt and pepper and set aside.

Step 3: Brown the Beef and Aromatics: In a large skillet over medium-high heat, cook the 1 lb of ground beef for 5/7 minutes until browned. Drain the excess fat. Add the chopped onion and sauté for another 5/6 minutes until translucent. Stir in the garlic for the final 1 minute.

Step 4: Create the Gravy: Sprinkle the 2 tablespoons of flour over the meat mixture and stir for 1 minute. Gradually pour in the 1 1/4 cups of beef broth, stirring constantly to avoid lumps. Simmer for 3/5 minutes until the gravy thickens enough to coat the back of a spoon.

Step 5: Season and Add Veggies: Stir in the salt, pepper, and optional curry powder. Fold in the 1 cup of peas and carrots and cook for 2/3 minutes until heated through.

Step 6: Serve: Spoon a generous heap of mashed potatoes into a bowl and top with a large ladle of the hot ground beef gravy.
