Maple Cookies with Maple Icing

These soft, cake-like cookies are flavored with maple extract and topped with a quick-setting, buttery brown sugar and maple syrup icing.

Maple Cookies with Maple Icing

Ingredients:

Granulated Sugar 2 cups
Buttermilk 1 cup
Maple Extract 1 tsp
Vanilla Extract 1 tsp
Baking Soda 1 tsp
Salt 1/2 tsp
Baking Powder 1 tsp
All Purpose Flour 4/1/2 cups

Butter, unsalted 1/2 cup
Milk 1/4 cup
Brown Sugar 1 cup
Maple Syrup 2 tablespoons
Salt 1 pinch
Confectioners Sugar 2 cups

How To Make Maple Cookies with Maple Icing:

First Step: Prepare Dough

  1. Preheat the oven to 350F (175C).

  2. Line a baking tray with parchment paper.

  3. Cream the 1 cup butter and 2 cups sugar together in a large bowl until light and fluffy.

  4. Add in the 3 eggs, one at a time, mixing well between eggs.

  5. Switching to a low speed on the mixer, slowly add the 1 cup buttermilk.

  6. Combine the 1 tsp maple extract, 1 tsp vanilla extract, 1/2 tsp salt, 1 tsp baking soda, and 1 tsp baking powder and mix well into the batter, ensuring they are incorporated well.

Second Step: Finish Dough and Bake

  1. Slowly add in half of the 4 1/2 cups flour, mixing well, then add the remaining flour gradually until a consistent dough is formed.

  2. Drop a cookie scoop of dough on the tray, leaving about 2 inches between scoops.

  3. Place the tray in the preheated oven and bake for 6 to 8 minutes, just until slightly golden on the edges. DO NOT OVERBAKE.

  4. Remove the tray from the oven and allow to cool for a few minutes before taking them off the tray. Place the cookies on a wire rack to cool completely.

Third Step: Prepare Icing

  1. To make the icing, melt the 1/2 cup unsalted butter and 1 cup brown sugar in a pan over medium high heat, stirring constantly.

  2. Add in the 1/4 cup milk, 2 tbsp maple syrup, and 1 pinch of salt and blend well.

  3. Remove from the heat and let cool for 10 to 15 minutes.

  4. Gradually add in the 2 cups confectioners sugar, beating well. If the icing is too thick, add a drop of milk at a time until you reach the desired consistency.

Fourth Step: Frost and Store

  1. Spread the icing over the cookies quickly, as the icing will thicken rapidly.

  2. Place the cookies into an airtight container for storage until serving. Enjoy!
