This Cheesy Cauliflower Casserole is a delicious and comforting side dish, perfect for any occasion. Tender cauliflower florets are baked in a rich, creamy cheese sauce, creating a flavorful and satisfying meal.

Ingredients:

Cauliflower florets 2 heads
Eggs 5
Heavy cream 1 ½ cups
Salt 1 ½ teaspoons
Pepper ½ teaspoon
Garlic powder 1 teaspoon
Onion powder 1 teaspoon
Butter, melted 4 tablespoons
White cheddar cheese, shredded 2 cups
Parmesan cheese, grated ½ cup
Mozzarella cheese, shredded ½ cup
Parmesan cheese, grated (for topping) ½ cup

Instructions:

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.
  2. Bring a large pot of water to a boil. Add the cauliflower florets and cook for 3-4 minutes, or until just tender.
  3. Drain the cauliflower thoroughly to remove as much moisture as possible. Transfer the cauliflower to the prepared baking dish.
  4. In a medium bowl, whisk together the eggs, heavy cream, salt, pepper, garlic powder, onion powder, shredded white cheddar cheese, ½ cup grated parmesan cheese, and shredded mozzarella cheese.
  5. Melt the butter and allow it to cool slightly. Whisk the cooled melted butter into the cheese mixture.
  6. Pour the cheese mixture evenly over the cauliflower in the baking dish.
  7. Sprinkle the remaining ½ cup of grated parmesan cheese over the top.
  8. Bake for 35-40 minutes, or until the top is golden brown and the casserole is bubbly.
  9. Let it cool slightly before serving. Serve warm.
