For the Bread For the Brown Sugar Crumble
2 cups all-purpose flour 1/3 cup packed brown sugar
1 cup granulated sugar 1/4 cup all-purpose flour
1 1/2 teaspoons baking powder 2 tablespoons diced unsalted butter
1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon
1 teaspoon salt
1 egg, well beaten
3/4 cup orange juice
2 tablespoons vegetable oil
1 tablespoon orange zest
1 1/2 cups fresh cranberries, coarsely chopped
1/2 cup chopped walnuts (optional)

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, combine the beaten egg, orange juice, oil, and zest.
  4. Add wet ingredients to dry, mixing until just combined. Fold in cranberries and walnuts.
  5. Pour batter into the loaf pan, spreading evenly.
  6. For the crumble, combine brown sugar, flour, butter, and cinnamon until crumbly.
  7. Sprinkle crumble over the batter.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then move to a wire rack
