Ingredients:

All-purpose flour 1 1/2 cups
Baking soda 1 teaspoon
Baking powder 1/2 teaspoon
Salt 1/2 teaspoon
Ground cinnamon 1 teaspoon
Ground nutmeg 1/2 teaspoon
Unsalted butter (melted) 1/2 cup
Granulated sugar 3/4 cup
Brown sugar (packed) 1/4 cup
Large eggs 2
Vanilla extract 1 teaspoon
Grated zucchini (squeezed) 1 cup
Grated apple (peeled and cored) 1 cup
Chopped walnuts or pecans (optional) 1/2 cup

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
  2. Mix Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
    • Set aside.
  3. Mix Wet Ingredients:
    • In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
    • Add the eggs, one at a time, mixing well after each addition.
    • Stir in the vanilla extract.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Gently fold in the grated zucchini and grated apple until evenly distributed.
    • If using, fold in the chopped walnuts or pecans.
  5. Bake:
    • Pour the batter into the prepared loaf pan and spread it evenly.
    • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
