Step 1: Prep and Preheat: Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.

Step 2: Brown the Sausage: In a large skillet over medium heat, cook the 1 lb of pork sausage. Use a spatula to break it into small, uniform crumbles as it browns. Once fully cooked, drain any excess fat thoroughly.

Step 3: Mix the Filling: In a medium mixing bowl, combine the hot cooked sausage with the 8 oz of softened cream cheese, 1/4 tsp of garlic powder, 1/4 tsp of onion powder, and 1/4 tsp of black pepper. Stir until the mixture is creamy and well-blended. If you are using the 1/4 cup of cheddar cheese, fold it in at this stage.

Step 4: Assemble the Crescents: Unroll the 2 cans of crescent roll dough and separate them into individual triangles. Place a generous spoonful of the sausage mixture onto the wide end of each triangle. Roll the dough up toward the narrow point, gently pinching the edges to keep the filling secure.

Step 5: Final Flourish: Place the rolls on the prepared baking sheet. Beat the 1 egg in a small bowl and lightly brush the top of each crescent. This ensures they develop a beautiful, shiny, golden-brown finish in the oven.

Step 6: Bake: Bake for 12/15 minutes or until the pastry is puffed and golden.

Step 7: Cool and Serve: Allow the crescents to rest for about 5 minutes before serving. The filling will be very hot, and this brief cooling period helps the cream cheese set slightly.
