Sausage Peppers and Onions

Sausage, peppers and onions is a classic dish that is easy to make and full of flavor. You can cook it on the stove, in the oven or in the slow cooker, depending on your preference and time. Here are some tips and variations for making this delicious meal:

  • Choose your sausages: You can use any kind of sausages you like, such as Italian, bratwurst, chicken or turkey. You can also use a mix of sweet and spicy sausages for more heat.
  • Cut your peppers and onions: Slice your bell peppers and onions into thin strips, about 1/4 inch thick. You can use any color of bell peppers you like, or a combination of different colors for more visual appeal. You can also add other peppers, such as poblano, banana or jalapeño, for more flavor and spice.
  • Season your dish: You can keep it simple with salt, pepper and garlic, or add some dried herbs, such as basil, oregano or thyme. You can also add some mustard, vinegar or wine for some tanginess.
  • Cook your dish: There are different ways to cook sausage, peppers and onions, depending on how you want to serve it.

     

    Here are some options:

    • On the stove: Heat some oil in a large skillet over medium-high heat. Brown the sausages on all sides, then transfer to a plate and slice. Cook the garlic and onions in the same skillet for about 10 minutes, stirring occasionally, until soft. Add the peppers and seasonings and cook for another 10 minutes, until tender. Return the sausages to the skillet and simmer for 10 minutes, until heated through.
    • In the oven: Preheat the oven to 400°F. Cut the sausages into bite-sized pieces and place them in a large baking dish. Add the peppers, onions, garlic and seasonings and toss with some oil to coat. Roast for about 45 minutes, stirring once or twice, until the sausages are cooked and the vegetables are charred.
    • In the slow cooker: Place the peppers, onion, garlic and seasonings in a 5-quart or larger slow cooker. Pour some beer or broth over the mixture and stir to combine. Place the sausages on top of the pepper mixture in an even layer. Cover and cook on low for 6 hours or on high for 3 hours, until the peppers are tender and the sausages are cooked through.
  • Serve your dish: You can serve sausage, peppers and onions in different ways, such as:
    • On a hoagie roll or a long loaf of Italian bread with some cheese
    • Over pasta or rice with some tomato sauce
    • Over polenta or mashed potatoes with some gravy
    • As a side dish with a green salad
